Pasta Fresca

Ingredients

  • 5 oz. angel hair pasta
  • 3 T. olive oil
  • 1 T. chopped garlic
  • Pinch salt and pepper
  • 2 oz. white wine
  • 1 T. Parmesan cheese
  • 1 sprig Italian parsley
  • 3 oz. raw shrimp, peeled and deveined
  • Pinch lemon zest
  • 1 t. fresh basil, julienne cut
  • 2 oz. fresh asparagus
  • 1/4 c. chopped roma tomatoes

Preparation

Step 1

Heat oil in sauté pan, add salt, pepper and garlic.
Lightly brown.
Add shrimp and cook half way--about 2 minutes.
Add lemon zest, basil, tomato and asparagus.
Toss
Add white wine, bring to simmer and scrape bottom of pan.
Cook one minute more until shrimp is cooked.
Toss shrimp mixture with pre-cooked pasta and place in bowl.
Garnish with parmesan & parsley.
