Sweet Potato Bowl

This recipe is very filling, but won't leave you feeling heavy and bloated.

Ingredients

  • 2 sweet potatoes, baked
  • 1 pkg. frozen 365 Everyday Value mangos, thawed
  • 2 red bell peppers, chopped
  • 2 15oz. cans 365 Everyday Value no-salt added black beans, rinsed and drained
  • 2 avocados, chopped
  • 1/2 bunch cilantro, chopped
  • freshly squeezed lime juice (to taste)
  • Balsamic vinegar (to taste)

Preparation

Step 1

Preheat oven to 350°F. Place whole sweet potatoes on baking sheet and bake for 45 minutes or until soft in the center. Cool slightly, peel skin off and cut into pieces. IF using leftovers, warm the sweet potatoes before using. Place a generous portion of sweet potatoes into a large serving bowl. Top with mango, bell pepper, black beans, avocado, and cilantro. Drizzle with lime juice and vinegar, toss gently and serve.
