PUMPKIN SOUP

Ingredients

  • 1/4 stick butter
  • 2 cloves garlic
  • 1 large onion
  • 2 cups pumpkin puree
  • curry powder to taste
  • bayleaf
  • 3 cups Stock ( ck or vegetable )
  • 1/3 cup light cream
  • coconut for garnish
  • salt and pepper

Preparation

Step 1


Sautee garlic and onion until soft….8 min, add curry powder to taste 1TBS at the time,
Add pumpkin, bay leaf and stock….. boil and then simmer 30- 45 min…..let cool….
Run blender…..add light cream….. heat…..DO NOT BOIL
Garnish with coconut
