Ingredients
- 7-9 lb. standing rib
- 8 Tbsp salt
- fresh garlic
- 3 tsp pepper
Preparation
Step 1
Rub roast with salt and pepper mixture. Split garlic lengthwise and rub roast with the pieces. Make tiny incisions all over the meat, and insert leftover garlic pieces. Place meat, fat side up, on rack in pan. Roast at 300 for 2 hours 45 mins. - rare; 3 hrs. 5 mins - medium; 3 hrs. 40 mins. - well-done.
Let roast stand 10-15 minutes before slicing.
