CHICKEN – GRILLED RED PEPPER CHICKEN

Ingredients

  • 4 servings
  • 4 chicken breast quarters, with wings attached
  • 1 cup freshly squeezed lemon juice
  • 1 garlic clove, smashed
  • 1 cup roasted red peppers, chopped
  • 1 dried whole red chile, broken
  • 2 Tbs.olive oil
  • 1 tsp. each dried basil and mint
  • 1/2 tsp. each salt and cracked black pepper.

Preparation

Step 1

Trim excess fat from chicken and place in a resealable plastic bag. In blender or food processor, combine lemon juice, garlic, red pepper, chile, oil, basil, mint, salt and pepper, puree. Pour over chicken; seal and chill 1- 2 hours. Heat grill to medium-high for indirect heat. Grill chicken 15- 20 min., turning once until juices run clear when skin is pierced with knife.
