Crab Cakes II

Ingredients

  • 1 cup panko crumbs, divided
  • 1/2 lb. lump crabmeat
  • 1/4 cup red bell pepper, diced
  • 1/4 cup minced fresh chives
  • 1 tsp. Old Bay seasoning
  • 1/2 tsp. red pepper flakes
  • 1/2 tsp. kosher salt
  • 1/3 cup mayonaise
  • 1 egg
  • Juice of 1/2 lemon
  • 1/4 cup veg. oil, divided

Preparation

Step 1

Line a plate with parchment paper. Sprinkle with 1/4 cup panko crumbs.

Combine crabmeat, 1/2 cup panko, bell pepper, chives and seasonings in large bowl. Whisk egg, mayo, and lemon juice in small bowl. Gently fold into crab mixture.

Form cakes and place on baking sheet. Press in to crumbs and flatten. Sprinkle with other 1/4 cup panko; chill 30 min or up to 2 hrs.

Fry 1/2 the cakes in 2 T. oil over med. heat 1-2 min. per side. Repeat.
