Potato Salad

Ingredients

  • 1 T. minced dried onion
  • 2 cups mayonnaise
  • 1/4 cup honey mustard
  • 1/2 cup sugar
  • 1/2 cup milk
  • 5 eggs-hard boiled
  • 5 lbs russet potatoes

Preparation

Step 1

Boil potatoes and eggs in salted water until fork tender. As the potatoes are cooking mix the mayo, mustard, milk, and sugar together in a large mixing bowl. Rehydrate dried onions in a small amount of hot water until they soften and add to the mayo mixture. When the potatoes are finished cooking drain off the excess liquid and add them to the mayo mixture while they are still warm. Mix thoroughly and refrigerate until cooled.
