Sushi Vinegar

Ingredients

  • 1000 ml rice vinegar
  • 430 gr sugar
  • 230 gr salt
  • 3 gr konbu dashi (seaweed)

Preparation

Step 1

Place all ingredients in a small pot and bring to a simmer over medium heat until the sugar dissolves (do NOT let mixture come to a boil). Then remove from the heat and leave to cool to room temperature.
