PUFF PASTRY

Ingredients

  • 5 cups of bread flour
  • 2 1/2 teaspoons of salt
  • 2 cups of water
  • 2 cups of unsalted butter

Preparation

Step 1

Mix flour and salt together then pour water in as you mix. Form a dough like you would for bread. Place butter between two sheets of clear wrap and roll until about 1/4 inch thick. Place in fridge for at leadt 20 minutes until it is firm. Roll out dough and form a rectangle about 1/2 inches thick. Place butter in center and fold dough to completly cover butter. Roll into a rectangle again then fold into thirds. Turn 90 degrees and roll again into a rectangle 1/2 inches thick. Place in fridge for 30 minutes. Roll and turn 2 more times then back to fridge. Repeat for a total of six times. Wrap in plastic each time. When used, bake at 400 degrees.
