Tomato and Zucchini Pasta

Ingredients

  • 2 tbsp. olive oil
  • 2 sliced garlic cloves
  • 2 tsp. lemon zest
  • 1/2 tsp. chili flakes
  • 1/2 lb. halved cherry tomatoes
  • 2 zucchini, thinly sliced lengthwise
  • warm cooked spaghetti
  • freshly squeezed juice of 1/2 lemon
  • fresh basil leaves
  • grated Parmesan
  • salt and pepper

Preparation

Step 1

Heat 2 tbsp. olive oil in a frying pan. Add sliced garlic cloves, 2 tsp. lemon zest and 1/2 tsp. chili flakes and cook for 1 min. Add 1/2 lb. halved cherry tomatoes and 2 zucchini, thinly sliced lengthwise and cook for 1 min. Add warm cooked spaghetti, lemon juice, fresh basil, Parmesan, salt and pepper and toss to combine.
