Ingredients

  • 750 ML BURGUNDY WINE
  • 1/2 GALLON APPLE CIDER
  • 1/2 CUP KOSHER SALT
  • 2 TBSP GARLIC POWDER
  • 2 TBSP ONION POWDER
  • 1/2 TBSP GROUND ROSEMARY
  • 1/2 TBSP GROUND MARJORAM
  • 1/2 TBSP GROUND THYME
  • 1 TSP GROUND CLOVES
  • 1 TSP GROUND NUTMEG
  • 1 TBSP GROUND CINNAMON

Preparation

Step 1

PLACE ALL INGREDIENTS INTO A STOCK POT AND BRING TO A BOIL... STIRRING BOIL FOR 10 MINUTES, REMOVE FROM HEAT AND LET COOL TO ROOM TEMP, PLACE MEAT INTO LARGE BUCKET AND POUR BRINE OVER MEAT, COVER AND PLACE INTO FRIDGE FOR 4 - 12 HOURS TURNING SEVERAL TIMES THEN COOK

GOOD FOR 16 TO 24 LB TURKEY
SMOKE WITH APPLE FOR 4 HOURS AT 225 F. TILL TURKEY REACHES AN I.T OF 180
