Ingredients
- 1 pie crust
- 1 T chopped rosemary
- 1/4 t ground pepper
- 2 c Gruyere cheese, divided
- 1 1/2 # Yukon Gold potatoes
- 1 1/2 # sweet potatoes
- 1 t kosher salt
- 2/3 c heavy cream
- 1 garlic clove, minced
Preparation
Step 1
Preheat oven to 450 degrees. sprinkle surface of pie crust with rosemary, pepper and 1/2 c Asiago cheese. Top with 2nd pie crust and roll into 13 " circle. Press onto bottom and sides of springform. Fold edges under. Chill. Peel and thinly slice potatoes.Layer 1/3 of each yukon and sweet aand salt into prepared crust. Sprinkle with 1/4 c cheese. Repeat layers twice, pressing layers down to fit. Microwave cream and garlic on high for 45 seconds. Pour over potatoes. Sprinkle with remaining 3/4 c cheese. Cover pan with heavy duty foil and place on cookie sheet. Bake at 450 degrees for 1 hour. Uncover and bake for 25 minutes more until crust is brown. Let stand 10 minutes and carefully transfer to serving plate. Slice i nto pie pieces with long knife.
