Orange Ricotta Pancakes

Ingredients

  • Zest and juice of 2 oranges
  • 1 3/4 cups of whole-milk ricotta
  • 2 large eggs, lightly beaten
  • 1 cup self-rising flour
  • 1/3 cup plus 2 TB granulated sugar
  • 1 tsp baking powder
  • 1/8 tsp salt
  • Confectioners suga

Preparation

Step 1

preheat griddle to 350 (med-heat). Spray cooking spray generously. In a medium bowl, whish together, orange zest, orange juice, ricotta, and eggs. Add flour, sugar, baking powder, and salt, whisking until combined.

Drop batter on skillet. Sprinkle with confectioners sugar.
