Borscht

Ingredients

  • beets
  • carrots
  • potatoes
  • green onion
  • salt
  • whipping cream
  • peas either fresh or frozen
  • onion
  • butter

Preparation

Step 1

Clean vegetables. Dice beets add water to cover. Bring to a boil then simmer to reduce. Add carrots and potatoes. Boil til soft add chopped green onion. Add salt. Add some whipping cream and peas. Fry onion in butter and add to soup.

I just add enough cream to make a nice pink color.
