Pineapple Mousse Torte

Ingredients

  • 1 pkg (8oz) cream cheese, softened
  • 1 1/4 cup sugar
  • 1/2 tsp grated lemon peel
  • 1 can (15 1/2oz) crushed pineapple, undrained
  • 1 can (8oz) pineapple tidbits, undrained
  • 2 envelopes unflavored gelatin
  • 2 1/4 cup whipping cream, whipped
  • 2 1/4 cups chocolate wafer crumbs
  • 1/2 cup butter

Preparation

Step 1

CHOCOLATE CRUMB CRUST:
Mix the chocolate wafer crumbs, and melted butter. Press firmly onto bottom of 9-inch springform pan.

Blend cream cheese with sugar and lemon peel.

Drain juice from crushed pineapple and tidbits into small saucepan. Sprinkle gelatin over juice. Place over low heat and stir until gelatin is completely dissolved.

Add crushed pineapple to cream cheese mixture; stir in gelatin mixture until blended. Thoroughly fold in whipped cream.

Pour filling into crust. Chill at least 5 hours or overnight. Remove sides of pan. Top with pineapple tidbits and garnish, if desired
