  • 2 LBS PORK LOIN
  • 1 MED ONION DICED
  • 3 CARROTS DICED
  • 3 CLOVES GARLIC MINCED
  • 1 CHIPOTLE CHILE IN ADOBO CHOPPED PLUS 2 T SAUCE
  • 2 15.5 OZ CANS CANNELLINI BEANS DRAINED AND RINSED
  • 1 20OZ DICED TOMATOES
  • 2 T TOMATOE PASTE
  • 1 1/2 t OREGANO
  • 1 t CUMIN
  • 1 t SALT
  • 1/2 t PEPPER
  • 1/4 CINNAMON AND CAYENNE PEPPER
  • 1/4 CUP CILANTRO

Preparation

Step 1

PLACE ALL INGREDIENTS EXCEPT CILANTRO INTO CROCK POT. COOK ON HIGH 5 HOURS OR LOW FOR 8 HOURS. SHRED PORK WITH TWO FORKS AND STIR IN CILANTRO. SERVE IN CORN TORTILLAS. WITH CRUMBLED QUESO FRESCO, RED ONION AND LIME WEDGES.
