  • 4 CUPS HALF AND HALF
  • 4 CUPS CLAM JUICE
  • 2 CUPS DICED ONION
  • 4 CUPS YUKON GOLD POTATOES
  • 4 CUPS MINCED CLAMS
  • 2 CUP PORK SCRAPS OR HAM SCRAPS
  • 1 CUP BUTTER
  • 2 CUP CHICKEN BROTH
  • 2 CUPS DICED CELERY
  • 1 CUP WHITE WINE
  • 1/2 TSP WORCESTERSHIRE SAUCE
  • 2 TSP GARLIC
  • 1 TSP DILL WEED
  • 1 – 2 TSP BLACK PEPPER

Preparation

Step 1

MELT BUTTER IN LARGE STOCK POT, ADD
ONIONS SAUTÉ UNTIL CLEAR, STIR IN FLOUR
AND COOK OVER LOW HEAT, SET ASIDE
SEPARATE POT BRING CLAMS AND CLAM
JUICE TO A BOIL REDUCE HEAT AND SIMMER
15 MINS. IN ANOTHER PAN BOIL POTATOES
TILL TENDER DRAIN AND SET ASIDE. SLOWLY
POUR CLAM STOCK OVER BUTTER / ONION
MIX BRING TO A BOIL REDUCE HEAT TO
SIMMER. SLOWLY MIX IN REMAIN
INGREDIENTS HEAT THROUGHLY DO NOT
BOIL.
