  • 1 1/2 LB BONELESS PORK
  • 1/2 LB PORK FAT
  • 1 TBSP PAPRIKA
  • 1 1/2 TSP YELLOW MUSTARD SEEDS
  • 1 1/2 TSP SUGAR
  • 1 1/2 TSP KOSHER SALT
  • 1/2 TSP BLACK PEPPER
  • 1/2 TSP MARJORAM
  • 1/2 TSP THYME
  • 3 CLOVES GARLIC MINCED
  • 1/4 CUP DRY WHITE WINE

Preparation

Step 1

CUBE PORK AND FAT INTO CUBES, PLACE IN
BOWL ,SET ASIDE MIX ALL REMAIN INGREDIENTS
POUR OVER CUBED MEAT COATING WELL, COVER
BOWL PLACE IN FRIDGE OVER NIGHT,
GRIND MEAT THROUGH ¼ PLATE, MIX ANY EXTRA
JUICE BACK INTO GROUND MEAT. PREP CASINGS
AND PLACE ONTO STUFFING TUBE AND STUFF
MEAT INTO CASINGS. THEN COOK.
