Chicken Picatta

Ingredients

  • 5 lbs. boneless chicken breasts
  • 2 cups chicken broth
  • 1 cup dry white wine
  • garlic to taste
  • fresh parsley
  • butter as needed
  • parmesean cheese
  • flour for dusting

Preparation

Step 1

Flour chicken pieces, then pound between wax paper. Brown in pressed fresh garlic and butter, add as needed. Place in baking dish.

Boil in same pan 2 cups chicken broth, 1 cup wine, garlic and parsley. Pour over chicken. Cover with parmesean cheese.

Bake covered at 350 for 30-45 minutes, until chicken is cooked through. Serve over rice or noodles.
