Homemade pork sausages

Ingredients

  • 1/2 lb ground pork
  • 1/2 lb ground turkey
  • 2 oz Panko breadcrumbs
  • 1 egg, beaten
  • 2 garlic clove, crushed
  • 1 tbsp chopped fresh parsley or marjoram
  • 2 green onions
  • 3/4 cup cooked carrot, sweet potato or parsnip(or a mix)
  • 1/2 apple chopped
  • 3 tbsp olive oil
  • salt and freshly ground black pepper

Preparation

Step 1

If your carrot, sweet potatoes or parsnips are raw, cook until very soft

Place all the ingredients, except the olive oil, into a bowl and mix thoroughly then season well with salt and freshly ground black pepper.

Fry a tiny bit of the mixture in a hot pan with a little olive to check the seasoning. Add more if required.

Divide the mixture into 12 pieces and shape each one into a sausage shape.

To cook the sausages, heat a frying pan on a low to medium heat, add two tablespoons of olive oil and gently fry the sausages for 12-15 minutes, turning occasionally, until golden on all sides and completely cooked through.
