Ingredients
- 8 oz. breakfast sausage
- 1 medium potato, shredded
- 1/4 C. chopped onion
- 4 eggs, beaten
- Flour tortillas
- Shredded lettuce
- 1/4 C. shredded Monterey Jack cheese
- 1 tomato, chopped
Preparation
Step 1
Cook sausage, potato, and onion in large skillet over medium-low heat for 12 to 15 minutes; breaking sausage into pieces. Pour off drippings.
Pour eggs over sausage mixture; cook over medium heat 2 to 3 minutes or until eggs are cooked, stirring frequently.
Serve on tortillas with lettuce, cheese, and tomato.
