Ingredients

    oz. breakfast sausage

  • 1

    medium potato, shredded

  • ¼

    C. chopped onion

  • 4

    eggs, beaten

  • Flour tortillas

  • Shredded lettuce

  • ¼

    C. shredded Monterey Jack cheese

  • 1

    tomato, chopped

Directions

Cook sausage, potato, and onion in large skillet over medium-low heat for 12 to 15 minutes; breaking sausage into pieces. Pour off drippings. Pour eggs over sausage mixture; cook over medium heat 2 to 3 minutes or until eggs are cooked, stirring frequently. Serve on tortillas with lettuce, cheese, and tomato.
