Grilled Chive Potatoes

Ingredients

  • 6 medium red potatoes
  • 6 T unsalted butter
  • 6 T chopped chives
  • 1 tsp grated lemon peel
  • 1/4 C Vegetable oil

Preparation

Step 1

-Boil potatoes until tender - about 25-30 minutes. drain
-Cut potatoes in half, slightly flatten, cut side down
-Melt - butter, chives and lemon peel in saucepan, 1-2 minutes. Season with salt and pepper.
-Brush 3/4 of mixture over potatoes.
-Put oil in a non-stick pan, heat over medium heat.
-Place potatoes, cut side down. Cook til crisp - 10-12 minutes.
-Drizzle remaining warm chive butter over the cooked potatoes.
