Lowfat Spinach & Cheese Breakfast Quiche

Ingredients

  • 1 - can Evaporated Milk
  • 3 - egg whites
  • 2 - eggs
  • 1/3 c - lowfat cottage cheese
  • 1/4 c - lowfat shreaded parmesan cheese
  • 1 - prepared pie crust
  • 1 box - frozen chopped spinach
  • salt and pepper to taste

Preparation

Step 1

Preheat oven to 425

1. Thaw spinach, squeeze moisture as much as
possible. Pat dry with paper towel - set aside
2. Whisk together Evaporated Milk, egg whites and
eggs
3. Mix in spinach, cheeses, salt and pepper
4. Place prepared pie crust on cookie sheet and pour mixture into uncooked shell.
5. Bake for 15 minutes at 425, reduce heat to 350 and cook for an additional 20 minutes until filling is set.
