Ingredients
- 2 grilled chicken breasts
- (seasoned with salt, pepper, paprika, and green chili powder)
- 4 cloves of garlic, minced
- 4 minced shallots
- 2 T. chili infused olive oil (or regular)
- Juice and zest of one lemon
- 1 cup fresh spinach
- 1/2 cup chopped kale
Preparation
Step 1
In a large pan sauté garlic and shallots in olive oil for about 2 minutes. Add spinach and kale and cook for one minute. Add lemon juice and zest and cook about one more minute.
Serve with grilled chicken breasts.
