Ingredients
- 1 lb. veggie ground or veggie sausage
- 3 med. beets, grated
- 2 C plus of grated red cabbage
- 1 large red onion chopped
- garlic, chopped
- 1/3 c water
- 1 T red wine vinegar
Preparation
Step 1
Saute the onions and garlic on medium heat until soft.
If veggie ground or sausage needs to cook, add that next and brown until cooked through.
Add beets, cabbage, water and vinegar. If using pre-cooked veggie ground, add that now.
Reduce heat slightly and simmer until vegetables are soft and liquid is nearly all evaporated, stirring occasionally.
Serve with a dollop of plain Soy Yogurt with dill if desired.
