Ingredients
- 1/4 C + 2 T olive oil
- 3 T lemon juice
- 1 T chopped rosemary
- 3 cloves minced garlic
- Ground pepper
- 6 5oz boneless pork rib chops
- 1 T capers
- 1 T Dijon mustard
- 1 T white wine vinegar
- 1 C flat leaf parsley
- 1/2 C basil
- 1/2 C mint
- Salt
Preparation
Step 1
In large bowl, whisk 1/4 C oil with lemon juice, rosemary & 2/3rds garlic; season with salt & pepper. Add pork chops; turn to coat. Let stand 1 hr.
Meanwhile in food processor, pulse remaining garlic with capers, mustard & vinegar to combine. Add parsley, basil & mint; pulse to chop. Add remaining 2 T olive oil. Transfer salsa to bowl; season with salt & pepper.
Light grill. Remove chops from marinade & season with salt. Grill over hi heat, turning once, tip cooked thru, @ 8-9 min. Let chops rest 5 min, then serve with salsa
