Herb and Mustard Crusted Grilled Beef Tenderloin

Ingredients

  • 4 large cloves garlic, peeled and finely minced
  • 3/4 cup fresh rosemary, coarsely chopped
  • 1/3 cup Dijon mustard
  • 3 tsp cracked black peppercorn
  • 1 4lb tenderloin of beef, well trimmed

Preparation

Step 1

Combine the minced garlic, rosemary, mustard and pepper in a small bowl and stir together to form a paste. Spread the paste evenly over all surfaces of the filet to coat. Arrange in a dish, cover and refrigerate overnight.
Heat the grill to high (either charcoal or gas). Grill the filet over high heat for 35 to 40mins, turning only once halfway through the cooking time, allowing the herb crust and meat to caramelize during cooking.
Remove the meat from the heat and allow to rest for at least 15mins before slicing and arranging on serving platter.
