Gorgonzola Polenta

Ingredients

  • 2 cups fat free lower sodium chicken broth divided
  • 1 cup 2% milk
  • 1 oZ. gorgonzola cheese, crumbled...about 1/4 cup
  • 1/4 t. kosher salt
  • 1/4 1/4

Preparation

Step 1

Combine 2 cups broth and 1 cup milk in a medium saucepan over medium heat; bring to a boil. Gradually whisk polenta into broth mixture, stirring constantly. Reduce heat to medium low; cook 4 minutes stirring frequently. Remove rom heat and stir in cheese, salt and pepper. Cover and let stand 5 minutes.
