OLIVE GARDEN BRUSCHETTA AL POMODORA

  • 4 RIPE ROMA TOMATOES, COARSELY CHOPPED
  • 6-8 FRESH BASIL LEAVES, CHOPPED
  • 1/4 CUP PLUS 2 TBSP EXTRA VIRGIN OLIVE OIL
  • SALT AND PEPPER
  • 8 SLICES OF CRUSTY BREAD
  • 3 CLOVES OF GARLIC

Preparation

Step 1

1. IN A MEDIUM BOWL, COMBINE THE TOMATOES, BASIL, AND OIL, AND SEASON WITH SALT AND PEPPER TO TASTE.

2. TOAST THE BREAD LIGHTLY ON BOTH SIDES, THEN RUB THE GARLIC ACROSS THE BREAD'S SURFACE AND TOP WITH THE TOMATO MIXTURE.
