Asian Marinated Chicken with Corn & Basil Faux-Fried Rice

Ingredients

  • Rice:
  • 1/3 C sliced green onions
  • 3 T soy sauce
  • 2 T mirin
  • 2 t minced garlic
  • 8 skinless chicken, bone-in chicken thighs
  • 1 T olive oil
  • 1/2 C uncooked basamati rice
  • 1 T olive oil
  • 2 T thinly sliced green onions
  • 3/4 C fresh yellow corn kernels
  • 1 T soy sauce
  • 1/4 C chopped basil
  • 1 lime

Preparation

Step 1

To prepare chicken, place first 4 ingredients in zip-lock bag. Add chicken & marinate 2 hrs.
Preheat oven to 375
heat large ovenproof skillet over med-hi heat. Add olive oil. Remove chicken; discard marinade. Add chicken to pan; saute 3 min. Turn chicken over & place in oven. Bake for 10 min. Let stand 5 min.
To prepare rice, cook for 15 min in boiling water; drain. Heat 1 T olive oil in large skillet or wok over med-hi heat. Add onions to pan; saute for 30 seconds, stirring constantly. Add rice, corn & 1 T soy sauce; saute for 5 min., stirring occasionally. Remove from heat; stir in basil. Grate lime rind over chicken. Serve with lime wedges.
