  • 1 TBSP OREGANO
  • 1 TBSP BASIL
  • 1/2 TSP CAYENNE
  • 1/2 CUP FLOUR-ON A PLATE
  • 2 EGGS-BEATEN-IN A PIE PLATE
  • 3 TBSP OLIVE OIL
  • 2 CUP PREPARED TOMATO SAUCE
  • 1 1/2 CUPS GRATED MOZZARELLA

Preparation

Step 1

POUND BREAST TIL 1/2" INCH THICKNESS -
COMBINE CRUMBS,1/4 CUP PARMESAN,OREGANO,BASIL AND CAYENNE-COAT EACH BREAST IN FLOUR-DIP EACH ONE IN THE EGG AND THEN IN THE CRUMB MIXTURE-HEAT OIL
ADD CHICKEN,COOK TIL BROWN -PUT 1 CUP TOMATO SAUCE IN THE BAKE DISH-TOP WITH BROWNED BREAST-TOP WITH REMAINING SAUCE.
SPRINKLE WITH MOZZARELLA AND PARMESAN CHEESE - BAKE 375 F FOR 20 MINS.
