No-Cream Asparagus Soup

Ingredients

  • 2 Tbls vegetable oil
  • 2 med onions, chopped
  • 2 med leeks(white & pale green parts only)chopped
  • 6 c chicken stock or vegetable broth
  • 2 pounds asparagus,ends trimmed, cut into 4 pieces
  • (peel if tough)

Preparation

Step 1

Put oil in large pot over medium heat. Add onions and leeks: saute' until tender, about 15 minutes. Add stock and asparagus: simmer until asparagus is tender,about 15 minutes. Strain soup into large pot. Puree solids in blender or food processor in batches. Return to pot. Season soup to taste.
