Quinoa Salad (Brodey)

Ingredients

  • 1 cup of quinoa ( preferably white quinoa according to Ariel - I sometimes mix the red and white varieties)
  • 2 cups of water (to boil quinoa)
  • 1 cup cherry or grape tomatoes - split in half
  • 4 tablespoons capers
  • 4 tablespoons chives
  • 1 small bunch of scallions chopped including greens
  • 2 tablespoons minced fresh Italian parsley
  • 4 tablespoons white wine vinegar
  • 2 tablespoons olive oil
  • salt and pepper to taste

Preparation

Step 1

Boil quinoa about 20 minutes in water - until all water has evaporated. Cool quinoa.

Mix all ingredients with cooled grains.
