Lemon Pudding

Ingredients

  • 2 eggs, separated
  • 1 tsp graded lemon peel
  • 1/4 cup lemon juice (one big lemon)
  • 2/3 cup milk
  • 1 cup sugar
  • 1/4 cup flour
  • 1/4 tsp salt

Preparation

Step 1

Preheat oven to 350 degrees.
Beat egg whites until stiff peaks form; set aside. Beat egg yolks. Blend in lemon peel, lemon juice, and milk. Add sugar, flour and salt; beat until smooth. Fold into egg whites.
Pour into ungreased 1 quart casserole. Place in 1 inch deep very hot water.
Bake 40 to 45 minutes.
