Tex-Mex Lasagna

Ingredients

  • 1 lb ground beef
  • 1 cup frozen onion, red & green peppers
  • 3 cloves minced garlic
  • 1 TBS chili powder
  • 1 tsp chipolte seasoning blend
  • 1 15.5 oz jar salsa
  • ^1 can dark kidney beans
  • ^1 can enchillada sauce
  • ^1 cup frozen corn
  • fajita shells
  • shredded cheese

Preparation

Step 1

1. Cook first 5 (*) ingredients in a large skillet over med-hi heat until meat is done.
2. Stir in salsa and add next 3 (^) ingredients cook until heated thoughly
3. Layer tortillas, meat mixture and cheese 3X, cover with aluminum foil
4. Bake cover at 350 for 30 minutes, bake uncovered 5 minutes, let stand 10 minutes.

Good served with rice
