Thai Grilled Chicken

Ingredients

  • 1 1/2 cups chicken or vegetable broth
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp chopped cilantro
  • 2 cloves minced garlic
  • 1 tsp grated ginger
  • 1 tsp sugar
  • 1/4 tsp crushed red pepper flakes
  • 4 boneless, skinless chicken breasts
  • 1 tbsp cornstarch

Preparation

Step 1

Combine all ingredients, except chicken and cornstarch, in ziploc bag. Add chicken and turn to coat. Cover and refrigerate 1 hour. Remove chicken from marinade.

Grill or broil chicken for 15 min until cooked through, turning and brushing with marinade.

Mix remaining marinade in small saucepan with cornstarch. Heat to a boil, stirring constantly, til sauce thickens and cooks. Simmer for 5 min. Serve with chicken.

Can use this marinade for grilled asparagus as well.
