Green Olive Almond Orange Relish (Good For Fish)

Ingredients

  • # 1/2 cup slivered almond, toasted
  • # 1/2 cup oil-cured green olives, coarsely chopped
  • # 1 small garlic clove, minced
  • # 1 teaspoon orange zest
  • # 1/4 cup orange juice
  • # 2 teaspoons white wine vinegar
  • # 1/4 cup extra virgin olive oil
  • # 1/4 cup fresh mint, minced
  • # 1 pinch cayenne pepper

Preparation

Step 1

Relish: Process almonds, olives, garlic, and zest in food processor until nuts and olives are finely chopped, (10-12 one-second pulses). Transfer to bowl and stir in orange juice, vinegar, olive oil, and mint. Season to taste with salt and cayenne; serve spooned over fish.
