Spaghetti Pie (Kathy's)

Ingredients

  • 1 lb. spaghetti (cooked)
  • 1 lb. pot cheese
  • 6 eggs (beaten)
  • 1 cup shredded mozzarella(4 oz.)
  • 1 Tblsp. Parsley (heaping)
  • 3 Tblsp. Pecorino Romano Cheese (heaping)
  • 1 tsp. salt
  • 1/4 tsp. pepper

Preparation

Step 1

Grease a 9x13 pan and set aside. Preheat oven to 350 degrees.

In a large bowl, mix together all ingredients other than spaghetti. Now, add the cooked pasta, and mix well. Pour mixture into prepared pan and place in oven.

Bake for 3/4hr. to 1 hour, or until top is browned.

Remove to a rack to cool, about 10 minutes. Run a knife around the edge to unmold. Cut into squares and serve.
