irish soda muffins

Ingredients

  • 1 cup plus 2 tbsp flour
  • 1/4 cup plus 1 tsp sugar, divided
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sour cream
  • 2 tbsp canola oil
  • 2 tbsp beaten egg
  • 1/3 cup raisins

Preparation

Step 1

in a small bowl, combine the flour, 1/4 cup sugar, baking powder, baking soda and salt. in another bowl, whisk the sour cream,oil and egg; stir into dry ingredients just until moistened. fold in the raisins
fill six greased or paper lined muffin cups half full. sprinkle with remaining sugar. bake at 400 degrees 15-18 minutes or until a toothpick inserted near the center comes out clean. cool 5 minuts before removing to wire rack. serve warm
