Ingredients
- 3 cups cooked potatoes, cooled
- 2 tablespoons butter
- 2 tablespoons milk
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper
- 1/2 cup cooked bacon, diced
- 1 cup grated sharp cheddar
- 2 tablespoons minced chives
- 1/4 cup flour
- 2 large eggs
- 1/2 cup bread crumbs
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Vegetable oil for frying
Preparation
Step 1
1.Whip potatoes with milk and butter to a smooth consistency.
2.Add 1 beaten egg, flour, chives, bacon, cheese, 1 teaspoon salt, and pepper; mix well.
3.In a bowl, combine bread crumbs, onion powder, garlic powder, and remaining salt.
4.Beat remaining egg in a small bowl and set aside.
5.Form potato mixture into 1-inch balls, roll in beaten egg and coat with bread crumb mixture.
6.Heat a large skillet with ¼-inch vegetable oil over medium-high heat.
7.Fry croquettes in hot oil a few at a time, making sure not to crowd the skillet and turning until golden brown on all sides.
8.Transfer to a paper towel-lined plate and add salt to taste before serving.
