Ingredients
- 1 cup light soy sauce
- 1/4 cup dijon mustard
- 2 cloves minced garlic
- 1 lb fresh wild salmon (cut into 4 pieces)
- 1 cup chopped fresh pineapple
- 1/2 cup chopped red onion
- 1/2 red bell pepper, seeded and chopped
- 2 Tbsp. chopped cilantro
- 2 Tbsp orange juice
Preparation
Step 1
In a large glass bowl, combine soy sauce, mustard, add garlic. Add salmon and turn in the mixture to coat. Cover bowl and refrigerated for at least 10 minutes to several hours. In a small bowl, combine pineapple, onion, pepper, cilantro, and orange juice to make a salsa. Remove salmon from the marinade. Grill salmon on medium to hight heat for about 10 minutes, until it flakes when tested with a fork. There is no need to turn the salmon. Alternatively, broil in the oven for 12 to 15 minutes. Top salmon with salsa and serve.
