Nana's Potato Noodles

A classic family recipe from my Great-Grandmother.

Ingredients

  • For noodles:
  • 2 cups flour
  • 2 small eggs
  • Water
  • Salt
  • For broth:
  • 3-4 cups water
  • 1 large onion (chopped)
  • 2 potatoes (chopped)
  • 1/4 lb butter
  • Salt
  • Pepper
  • Parsley

Preparation

Step 1

1) To make the noodles, mix the flour, eggs, 1/2 egg shell full of water for each egg, and a dash of salt to make a dough.

2) Roll out the dough and cut into 1/2 inch strips.

3) To make the broth, in a large pot, combine water, chopped onions and potatoes, butter, salt, pepper, and parsley. Bring the broth to a boil until the onions and potatoes are mostly dissolved.

4) Add noodles to the broth and continue cooking until the noodles are done.
