Ingredients
- 2 tablespoon olive oil
- 1 pound fresh whole green beans
- 1 cup onion; thinly sliced
- 10-12 medium cloves garlic; peeled
- salt and pepper
- 1-2 tablespoon balsamic or red wine vinegar
- 1 cup pine nuts; lightly toasted
Preparation
Step 1
Preheat oven to 400°F . Brush a large baking tray with 2 tablespoons olive
oil.
Spread green beans, onions, and garlic cloves on tray and sprinkle with
salt and pepper.
Bake for 20 minutes, intermittently stirring or shaking the tray. Taste a
bean to see if it's tender. If not, put it back 5 or 10 minutes more.
Remove from ovenl transfer to bowl. Drizzle with vinegar and black pepper.
Serve at any temperature, topped with lightly toasted pine nuts.
