Ingredients
- 2 med.cauliflower
- 1/2 c. butter
- 2 T. grated onion
- 1 c. finely-chopped celery
- 2 T. flour
- 1 qt. chicken stock
- 4 c. hot milk
- 2 egg yolks (opt.)
Preparation
Step 1
Boil flowerets until tender and mash, or put in blender Melt butter in pot and cook celery and onion for about 2 minutes Stir in flour, but do not brown Gradually add chicken stock. Add cauliflower, stir in hot milk, salt and pepper Stir over medium heat until mixture coats spoon Remove from heat and stir in beaten egg yolks. Shredded cheese may be sprinkled over top.
