Ingredients
- 2 or 3 large red bell peppers cut in half lengthwise, seeds and membranes removed
- 1 pkg roasted garlic and olive oil couscous
- 1 C chopped fresh spinach OR broccoli
- 1/3 C grated parmesan cheese
Preparation
Step 1
- In an 8 inch microwave safe pan, arrange peppermhalves; add 2 T water. Cver withnwaxed paper; microwave on high 3-4 min until crisp tender. Alternately may cook pepper halves in boiling water for 3 min; drain
- Meanwhile cook couscous as directed on package, omitting oil
- Stir in cheese and vegetable; spoon into pepper halves
- May make ahead and freeze if desired then reheat in microwave until hot.
