Fettuccine Alla Carbonara

Ingredients

  • 1/4 cup egg substitute
  • 2 TB evaporated skim milk or skim milk
  • 4 oz pkg dried fettuccine or linguine
  • 2 tsp margarine or butter
  • 1/4 cup grated Parmesan cheese (1 oz)
  • 2 TB snipped fresh parsley
  • 1 TB cooked bacon pieces

Preparation

Step 1

In a small bowl stir together the egg product and milk. Set aside.

In a large saucepan cook the fettuccine or linguine according to package directions, except omit any oil or salt. Drain well.

Return pasta to the hot saucepan. Immediately pour the egg mixture over pasta. Add margarine or butter. Heat and stir mixture over low heat about 2 minutes or until mixture thickens and pasta is well coated. Add the Parmesan cheese, parsley, and cooked bacon pieces; toss until combined. Serve immediately.
