Ingredients
- 1 lb chicken, cut into small cubes
- 1 pkg of bacon, cut slices into thirds
- 1 bottle of teriyaki sauce
- 1 lg can pineapple chunks
Preparation
Step 1
Wrap chicken with bacon and stick a tooth pick through to hold the bacon in place. Put in a container and cover with teriyaki sauce and half of the pineapple juice and chunks. Marinate for several hours or overnight.
Heat oven to 375ºF. Place chicken on a broiler pan that has been sprayed with cooking spray. Cook for about 12 minutes. Then turn broiler on low and cook for about 2 minutes on each side to crisp the bacon.
Serve with extra pineapple chunks. Can be served in a small crock pot and pineapple juice can be used to keep them moist.
This is good cooked on a grill in the summer too!
