Tomato Vodka Sauce

Ingredients

  • In oven safe pan add:
  • 2 cans SanMarzano Tomatoes (or your favorite brand).. "whole peeled"
  • olive oil
  • 1/4 onion, diced very small
  • 1 clove garlic - crushed
  • red pepper flakes
  • pinch of oregano
  • 1/4 cup vodka
  • 1/4 cup heavy cream

Preparation

Step 1

Combine in oven safe pan: olive oil, onion, garlic, red pepper flakes, oregano and tomatoes (crushed).
Cook for 5 minutes. Then add the vodka.
Bake in the oven @ 350 for 1 1/2 hours.

Transfer to blender (or use emulsifier) and puree. Transfer back into the pan, heat through, then add the cream.

Heat on low for 5 more minutes then pour over pasta....
