Ingredients
- 1 beef pot roast joint (approx. 1.5kg)
- 1 red onion, peeled and chopped
- 2 cloves garlic, peeled and crushed
- 1 bay leaf
- Fresh thyme
- 1 litre beef stock
- 1 tin chopped tomatoes
- 1 heaped tsp harissa paste (optional)
Preparation
Step 1
Add all ingredients to a slow cooker and cook on low for 8-12 hours until beef is tender. Serve with vegetables and potatoes.
