Beef Brisket Pot Roast

Slow cooking makes the beef pot roast joint really tender.

Ingredients

  • 1 beef pot roast joint (approx. 1.5kg)
  • 1 red onion, peeled and chopped
  • 2 cloves garlic, peeled and crushed
  • 1 bay leaf
  • Fresh thyme
  • 1 litre beef stock
  • 1 tin chopped tomatoes
  • 1 heaped tsp harissa paste (optional)

Preparation

Step 1

Add all ingredients to a slow cooker and cook on low for 8-12 hours until beef is tender. Serve with vegetables and potatoes.
